Hi Friends,

For Cinco de Mayo today, I wanted to share an incredibly special recipe with you all, my adaptation of my mother in laws enchilada recipe. My mother in law is an amazing home cook and one of my favorite things to do when I get the chance to see her, is follow her around the kitchen and record her delicious recipes. Something about this lovely lady is she does not measure anything, she just knows. I am one who likes to feel like I'm following a recipe, for the longest time I was intimidated to try to learn some of her delicious meals that we find ourselves craving all the time. Finally, I got brave and started following her around the kitchen and

creating a recipe for myself out of what she was doing. So far, it has worked beautifully. All the delicious recipes of hers that I make myself at home turn out just like hers.

(Below my mother in law cooking!)

My mother in law has a very particular way of doing each of her recipes. She is very meticulous and detailed in her cooking. To me it seems as though cooking is a form of artistic expression for her, the way she chops, dices, minces and rolls are very precise, everything always looks and tastes perfect. She puts in that little bit of extra love when she is preparing a meal like so many wives, moms and grandmas do. A true labor of love.

When she makes enchiladas, she fries and then hand dips each and every tortilla in the enchilada sauce and rolls them up one by one with chicken and cheese. I love to also make enchiladas this way. I enjoy sharing what I have learned from her with others. I have made enchiladas for many friends and loved ones and they always leave raving about the meal. This is one of my favorite meals to make for people when we are entertaining.

The reality though is that I don't always have time during the week or the patience to hand fry and roll each and every enchilada, one day I decided to make them into a casserole. We get the same delicious enchilada flavor with a bit less effort making this meal a lot less labor intensive. And a little less carb heavy as well. My family loves it because I’m willing to make this a little more frequently, since I don’t have to spend loads of time frying, dipping and rolling those tortillas. If you’re looking for great flavor and a little less work (though there is still work involved in this recipe) I highly recommend these enchiladas. They are divine and hit the spot every time!

I hope you try them! What are your favorite Cinco de Mayo foods and traditions? Leave me a comment!

Tools I used in this post:

This blender is by far my favorite blender. I can't compare it to a Blendec or a Vitamix obviously, but I did have a Ninja for several years and this inexpensive blender blows that one out of the water.

I love my Instant Pot and use it multiple times a week.

It's always nice to have a mesh strainer on hand. I find it to be very useful especially when making homemade enchilada sauce.

And I love having a nice big glass baking dish.

A LONG TIME AGO in a galaxy far, far away, it was a period of viral outbreak. Citizens of the planet earth were quarantined in their homes and attempting to remain sane, safe and healthy while flattening the curve.

During the quarantine families were trying to keep their kids entertained and desperately wanting to make happy memories, during times of so much uncertainty.

While staying home and staying safe two citizens of planet earth, Leah and Elizabeth decided to make memories by celebrating silly holidays and

thus decided to celebrate Star Wars day with their families.

It was May the 4th and there was so much fun to be had, making themed food and treats, racing droids and watching long favored movies about galactic rebellions, Sith Lords and the force.

Evading tie fighter s’mores and covering the earth in galactic slime brought smiles to the children. Devouring pizzas shaped like droids and wookie cookies provided joy that would turn even the dark side to the light.

The children of these citizens loved taking a break from the mundane and taking time to celebrate some of their favorite things. Epic light saber battles between fathers and sons and brothers and sisters made for an extra special day of celebration.

Finding joy in celebrating the small things allowed these two citizens of planet earth to focus on what truly was important, family above all else.

We hope that YOU find some joy in celebrating the small things today!

Today would be a great day to rent the newest installment of the Star Wars franchise.

Today's post was supposed to be a quarantine hack on making some of the most delicious cookies when you can't find flour or sugar at the store. I was SO excited about this post and had been salivating just thinking about making them while also day dreaming about dropping them off to a few friends and family to brighten their day.

Now tell me you wouldn't be SO excited to see some of these on your doorstep. *Insert heart eyes emoji*

Instead, I am coming to you with a completely different post that will hopefully still brighten your day as we go through my baking fail and we can all laugh about it together.

I do not claim, and never have claimed, to be great at baking. I have a very limited number of recipes under my belt that are constant wins. The thing is, I have made these cookies before for a gathering and they were a HUGE hit. I am having a hard time figuring out where I went wrong this time, but I can promise you, it was ALL wrong. hahaha

Let's start off with a baking win, just as proof that I have the ability to make cookies that look and taste like perfection.

Yes...they were just as delicious as they look.

Today I made sure to remind my family why I rarely bake with a disaster that I was able to slightly save because, well, they are cookies...and I didn't burn them.

I present to you my attempt at RED VELVET CHEESECAKE COOKIES

Oh boy....where do I begin...

FIRST OF ALL - These aren't just a mix it up and go kind of cookie. You have to create the "cheesecake filling" and put it in the freezer for an hour before making your cookies. THEN you create a red velvet dough that you flatten in your hand to encase said cheesecake filling before rolling it all up into a ball.

This is where things started to go wrong...

The red velvet cake mixture was REALLLLLLY sticky. Just imagine "peanut butter stuck to the roof of your mouth" consistency. There was NO WAY I was going to be able to flatten it out in my hand, put a frozen ball into the middle of it and then roll it up into a ball. This is where I tried to improvise thinking the FROZEN cheesecake mixture would just melt into the cookie. Clearly, this did not work.

I decided to try and salvage this idea by making a few cupcakes and placing the filling in the middle....

Hahahahahaha....NOPE! These turned out even worse than the cookies!!

Lastly, I had some almond bark to "drizzle" over the cookies. I did not get a picture of my drizzle as it ended up looking like the cheesecake filling globs just scattered randomly over the cookie. I turned it into a frosting and, for a split second, thought I could just pretend I made these epic cookies that you should all try and make.

But no. I could never bring myself to do such a thing. I would much rather share in the joy of you all being able to laugh with me at this epic baking fail.

This ended up just being a great reminder that what you see on the internet is not always a true representation of what is really going on behind the scenes. Things are easily manipulated to be appealing to what others WANT you to see and what they WANT you to believe.

Just remember, we are all messed up cookies underneath that layer of frosting we put on to hide our insecurities. Yet there is so much deliciousness to be had underneath it if we remove our focus off of what it looks like to everyone else.

Over the years, I have learned to laugh at myself whenever possible instead of beating myself up for my failures. It has truly carried me through some really hard things and also helped me reframe a lot of memories. I am a firm believer that laughter is the best medicine, especially when you can laugh at yourself. #laughterheals

Now it's your turn to share some of your baking fails with me in the comments to make me feel better. ;)
