Today's post was supposed to be a quarantine hack on making some of the most delicious cookies when you can't find flour or sugar at the store. I was SO excited about this post and had been salivating just thinking about making them while also day dreaming about dropping them off to a few friends and family to brighten their day.
Now tell me you wouldn't be SO excited to see some of these on your doorstep. *Insert heart eyes emoji*
Instead, I am coming to you with a completely different post that will hopefully still brighten your day as we go through my baking fail and we can all laugh about it together.
I do not claim, and never have claimed, to be great at baking. I have a very limited number of recipes under my belt that are constant wins. The thing is, I have made these cookies before for a gathering and they were a HUGE hit. I am having a hard time figuring out where I went wrong this time, but I can promise you, it was ALL wrong. hahaha
Let's start off with a baking win, just as proof that I have the ability to make cookies that look and taste like perfection.
Yes...they were just as delicious as they look.
Today I made sure to remind my family why I rarely bake with a disaster that I was able to slightly save because, well, they are cookies...and I didn't burn them.
I present to you my attempt at RED VELVET CHEESECAKE COOKIES
Oh boy....where do I begin...
FIRST OF ALL - These aren't just a mix it up and go kind of cookie. You have to create the "cheesecake filling" and put it in the freezer for an hour before making your cookies. THEN you create a red velvet dough that you flatten in your hand to encase said cheesecake filling before rolling it all up into a ball.
This is where things started to go wrong...
The red velvet cake mixture was REALLLLLLY sticky. Just imagine "peanut butter stuck to the roof of your mouth" consistency. There was NO WAY I was going to be able to flatten it out in my hand, put a frozen ball into the middle of it and then roll it up into a ball. This is where I tried to improvise thinking the FROZEN cheesecake mixture would just melt into the cookie. Clearly, this did not work.
I decided to try and salvage this idea by making a few cupcakes and placing the filling in the middle....
Hahahahahaha....NOPE! These turned out even worse than the cookies!!
Lastly, I had some almond bark to "drizzle" over the cookies. I did not get a picture of my drizzle as it ended up looking like the cheesecake filling globs just scattered randomly over the cookie. I turned it into a frosting and, for a split second, thought I could just pretend I made these epic cookies that you should all try and make.
But no. I could never bring myself to do such a thing. I would much rather share in the joy of you all being able to laugh with me at this epic baking fail.
This ended up just being a great reminder that what you see on the internet is not always a true representation of what is really going on behind the scenes. Things are easily manipulated to be appealing to what others WANT you to see and what they WANT you to believe.
Just remember, we are all messed up cookies underneath that layer of frosting we put on to hide our insecurities. Yet there is so much deliciousness to be had underneath it if we remove our focus off of what it looks like to everyone else.
Over the years, I have learned to laugh at myself whenever possible instead of beating myself up for my failures. It has truly carried me through some really hard things and also helped me reframe a lot of memories. I am a firm believer that laughter is the best medicine, especially when you can laugh at yourself. #laughterheals
