For Cinco de Mayo today, I wanted to share an incredibly special recipe with you all, my adaptation of my mother in laws enchilada recipe. My mother in law is an amazing home cook and one of my favorite things to do when I get the chance to see her, is follow her around the kitchen and record her delicious recipes. Something about this lovely lady is she does not measure anything, she just knows. I am one who likes to feel like I'm following a recipe, for the longest time I was intimidated to try to learn some of her delicious meals that we find ourselves craving all the time. Finally, I got brave and started following her around the kitchen and
creating a recipe for myself out of what she was doing. So far, it has worked beautifully. All the delicious recipes of hers that I make myself at home turn out just like hers.

My mother in law has a very particular way of doing each of her recipes. She is very meticulous and detailed in her cooking. To me it seems as though cooking is a form of artistic expression for her, the way she chops, dices, minces and rolls are very precise, everything always looks and tastes perfect. She puts in that little bit of extra love when she is preparing a meal like so many wives, moms and grandmas do. A true labor of love.
When she makes enchiladas, she fries and then hand dips each and every tortilla in the enchilada sauce and rolls them up one by one with chicken and cheese. I love to also make enchiladas this way. I enjoy sharing what I have learned from her with others. I have made enchiladas for many friends and loved ones and they always leave raving about the meal. This is one of my favorite meals to make for people when we are entertaining.
The reality though is that I don't always have time during the week or the patience to hand fry and roll each and every enchilada, one day I decided to make them into a casserole. We get the same delicious enchilada flavor with a bit less effort making this meal a lot less labor intensive. And a little less carb heavy as well. My family loves it because I’m willing to make this a little more frequently, since I don’t have to spend loads of time frying, dipping and rolling those tortillas. If you’re looking for great flavor and a little less work (though there is still work involved in this recipe) I highly recommend these enchiladas. They are divine and hit the spot every time!

This blender is by far my favorite blender. I can't compare it to a Blendec or a Vitamix obviously, but I did have a Ninja for several years and this inexpensive blender blows that one out of the water.
I love my Instant Pot and use it multiple times a week.
It's always nice to have a mesh strainer on hand. I find it to be very useful especially when making homemade enchilada sauce.
And I love having a nice big glass baking dish.
