With news of schools remaining closed for the rest of the year, I have decided to revamp our days a bit more and add in some things we usually do not have time for. Last week, we added in a fun cooking class and all learned together how to make pot stickers from scratch! I hope you all enjoy this fun video I made with my family of us making and taste testing our pot stickers! I will also share the recipes I used down below!




I found this recipe on Pinterest for dumpling dough, which we used as our Pot Sticker wrappers. The simplicity of the recipe had me sold. I wish I had watched the video before hand though, as I definitely should have kneaded my dough a lot more than I did. Either way, it didn't effect the taste but it did make it impossible to make circles out of the dough. As you will see in our video, it all worked out in the end.


I then used this recipe I found on Pinterest for the meat filling. I substituted the chicken for pork and I did forget/forego a few ingredients, but it did not seem to take away from the deliciousness that was our end result.


I definitely will be making these again and also making a dipping sauce as soy sauce alone was not a good substitute.

Family Movie Night is a weekly occurrence at our house. I married into a family of movie buffs, so the nights switch off from classics like It's A Wonderful Life, Willy Wonka & the Chocolate Factory and It Takes Two to our most recent favorites like Sonic The Hedgehog, Instant Family and Frozen 2.


This week we decided to have a little extra fun with our family movie night. Being stuck at home all the time has forced us to get creative as parents and helped us all realize there are still plenty of memories to be made during the coronapocalypse.



We decided to create our own movie premiere experience for the new



No movie experience would be complete without CANDY and POPCORN!! We made sure to stick with the theme of BRIGHT COLORS and picked up a few of our favorite candies along with some "spray in, shampoo out" hair spray colors. All of these items can be added to your weekly Walmart grocery list for the week so you aren't out doing any "unnecessary shopping".



Did I mention how much our family LOVES popcorn??


One way to make movie nights special is by keeping some reusable popcorn containers on hand.


With how much we love our popcorn, there is no way any of us our willing to share our popcorn, so this is perfect to avoid fights over who is holding the popcorn bowl and how someone can't reach it. Haha!



Now to the ACTUAL movie review!!!


This movie is truly one for the entire family. From Grandma & Grandpa, all the way down to your littlest ones. The musical aspect of the movie definitely kept everyone's attention as it is a different genre throughout every scene change. There was even a scene that reminded me of the type of "smooth" music my dad would always listen to when I was a kid. I couldn't help but go back and rewatch that scene after the movie was over and laugh some more. I am sure some of you will be able to relate.


We spent a good portion of the movie dancing to the original songs and then singing along to a familiar mashup, that once again, reminded me of my childhood. The kids were even able to recognize of few of the mashup songs, as well. #parentingwin


Needless to say, this is worth the $20 to rent on Amazon and even create your own in-home movie theatre experience. This movie brought in so many feel good emotions that I know we are all craving right now. It provided the perfect escape from the monotony that our days may have become and I always love making memories with this crew of mine. Thank goodness the rental lasts 48 hours as we are going to be rewatching it a few more times until we can add this gem of a movie to our collection of favorites.

Since we're all cooking a lot more these days, I thought I would share my delicious Mexican instant pot pozole recipe. I adapted this recipe for the instant pot, so you can get the delicious flavor of pozole that has been simmering all day, in a lot less time.


If you haven't tried pozole you need to. It is warm, comforting and delicious. Pozole is full of flavor that you get from cooking the chicken (and'or pork) and making your own broth while adding fresh homemade red sauce and oregano. Topping the pozole with lettuce, radishes and a squeeze of lime bring it over the top.


I use a 6 quart instant pot. It works well for our family of four. There are times (like when I make pozole) that I wish I had this 8 quart version. That is the dream. Since when I make things like pozole we tend to make a ton and eat it for days and days of leftovers!


The secret to this delicious pozole is the red sauce. It is absolutely delicious. I'm lucky enough to have learned authentic Mexican cooking by following my mother in law around the kitchen and writing down her every move. She is a phenominal home cook and I give her all the credit. The key though was figuring out the timing so that I don't have to babysit it on the stove for hours and hours. I love that on a weekend when I have little more time than a weeknight this is still doable and doesn't take all day. I hope you try it! Enjoy!
